Chicken Hor Fun
Chicken Hor Fun is a stew noodle dish using rice noodles called “Hor Fun” or Kuey tiaw. The broth is usually thick and made from the chicken stock, oyster sauce, soy sauce, rice wine, sugar, corn flour, salt and sesame oil. The garnishing consist of the marinated chicken meat that has been marinated with rice wine, soy sauce and sesame oil, vegetables like bok choy or mushroom, fried ginger, garlic and shallots and cut chili.
The rice noodles is usually fried with oil until they turn soft. The broth and the garnishing are added to it and ladled together before the dish is served in a bowl. The dish is often accompanied with the sweet chilli paste.
Chicken Hor Fun is very famous through out Perak especially in Ipoh. Most of the old type chinese kopitiam will have this dish in the menu.
